Bay scallops are harvested in the more shallow waters of bays along the east coast of Peru. With their firmer texture and smaller size, they're best prepared using a shorter, more gentle method of cooking like poaching or sauteeing.
Bay scallops are one of the easiest shellfish to prepare. Because of their small size, they cook quiickly and can easily be overdone. Prepare them with a little olive oil and garlic, and toss them with pasta for a quick, easy yet decadent meal.
It’s important to open and inspect your shipment as soon as you can after it arrives on your doorstep.
While there are a number of safe ways to thaw shellfish, by far, the best approach to preserve its flavor and consistency is to thaw it in the refrigerator.
Remove the scallops from the original packaging and place them on a plate or shallow pan to catch any liquid. Thaw it in the refrigerator for 18-24 hours (preferably overnight) before you plan to cook it.
