This recipe is not only easy but also a crowd pleaser! It doesn’t take much to put these together, giving you more time to prep for the party! These handheld baguette bites are a perfect appetizer for your get together, and pair deliciously with a Rosé or Lambrusco.

Ingredients and Method

Ingredients

  • FOR THE SHRIMP
  • 1 pound shrimp
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon sea salt
  • 4 cloves garlic, chopped
  • 1/2 teaspoon chili powder
  • 1/4 cup olive oil
  • FOR THE ASSEMBLY
  • 1 whole french baguette
  • 8 ounces basil pesto
  • olive oil
  • sea salt
  • 1 cup arugala
  • parsley, chopped
  • scallions, chopped

Method

  1. Preheat oven to 400 degrees. Toss all of the shrimp ingredients together with the shrimp. And place on a non-stick foil lined baking sheet and roast for 10 minutes until it is cooked through.
  2. While shrimp is roasting, slice at an angle an entire baguette in about 1 inch thick slices. Drizzle olive oil and some salt on the baguettes and toast them for 6 minutes at 350 degrees in a toaster oven, or you can use the oven at the same temperature as the shrimp and toast for 4 minutes.
  3. Slice the baguette. Once the shrimp is ready, spread on some pesto and at the same time add some arugula on top while adding a shrimp to each baguette slice. Top with some chopped up parsley and scallions.
  4. Any way you arrange them, they will not only look beautiful but they will taste delicious too!
