This recipe is a fan favorite on MeghanItUp and I'm so excited to recreate it using City Pier Seafood Atlantic Salmon. I started by broiling the salmon and then mixed it with Whole30 approved ingredients to create moist, flavorful patties that are lightly fried in oil. To serve, I made a tangy parsley tartar sauce for dipping. Such a simple, healthy, and flavorful dish that you'll be making all summer long!

Ingredients and Method

  • 12 ounces atlantic salmon, cooked, roughly chopped
  • 1 egg
  • 3 tablespoons almond flour
  • 1/4 cup onion
  • 1/4 cup lemon juice
  • 2 tablespoons parsley, minced
  • 1 clove garlic, minced
  • 1 tablespoon lemon zest
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • 3 tablespoons parsley, minced
  • 1 tablespoons apple cider vinegar
  • 1 tablespoon water
  • 1/2 tablespoon lemon zest
  • 1 clove garlic, minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • toasted brioche buns
  • butter lettuce
  • sliced red onion

  1. FOR THE SALMON BURGERS: In a large bowl, mix together all ingredients. Score the mixture into quarters and create a ball from each quarter.
  2. In a sauté pan, heat Olive Oil. Once the Oil is hot, add the Salmon balls to the pan. Gently press down the ball to create a flat topped patty. Let cook for 2 minutes and then flip and cook for an additional 2 minutes.
  3. FOR THE TARTAR SAUCE: In a bowl, mix all ingredients. Set to side and serve with salmon patties.
