Ingredients and Method
Ingredients
- 2 salmon portions
- 2 zucchinis, sliced
- 3 tablespoons olive oil
- 2 lemons, sliced
- 2 rosemary sprigs
- salt & pepper
Method
- Preheat oven to 350°F.
- Lay three pieces of foil on a flat surface. Place 8 Zucchini slices on foil and top with Salmon fillet. Season the Salmon with Salt & Pepper. Add 1 Tbsp Olive Oil, 1 clove minced Garlic, and 2 Lemon slices. Add a sprig of rosemary on top. Loosely wrap the oil then repeat for the other foil packets.
- Place foil packets on a baking sheet and bake for 20 minutes.
- Let packets cool for 5 minutes before opening. Remove rosemary and serve.
