Summer is always an inspiration for light and delicious food. We love grilling and we love seafood so it’s an easy choice when deciding what to make for dinner! This grilled swordfish is so delicious and simple to put together. The tomato and corn salad is a family favorite and adds a refreshing crunch to the meal! We enjoy this with an ice cold IPA or a crisp bottle of Rosé.

Ingredients and Method

Ingredients

  • FOR THE SWORDFISH
  • 4 cloves garlic, freshly chopped
  • 1 lime, juiced
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup olive oil
  • 4 swordfish steaks
  • FOR THE TOMATO & CORN SALSA
  • 2 ears of freshly steamed corn, kernels cut off, canned corn works fine too
  • 1 pint of grape or cherry tomatoes, sliced in half
  • 1/4 cup red onion, diced
  • 1/4 cup olive oil
  • 1 lime, juiced
  • fresh dill, chopped
  • fresh parsley, chopped
  • fresh basil, chopped
  • fresh scallions, chopped
  • kosher salt
  • freshly ground black pepper
  • pinch cumin

Method

  1. FOR THE SWORDFISH: Blend ingredients together and pour over the swordfish, letting it sit for 15 minutes.
  2. 5-6 minutes per side, medium to high heat. High heat on first side down to sear.
  3. FOR THE SALSA: Mix all together in a bowl and let it sit while the swordfish is grilling.
  4. Once the swordfish is ready you can top it with the tomato and corn salad!
