Flash-frozen at sea and at the peak of freshness, frozen yellowfin tuna is always an excellent choice.
While there are a number of safe ways to thaw frozen fish, by far, the best approach to preserve its flavor and consistency is to thaw it in the refrigerator. Simply remove the tuna from its original packaging and place it on a plate or shallow pan to catch any liquid. Thaw it in the refrigerator for 18-24 hours (preferably overnight) before you plan to cook it.

Cooking Instructions: Cook To An Internal Temperature of 145 Degrees F., Cook Within 24 Hours of Thawing
Cooking Methods: Grill, Pan Sear
Number of Servings: About 5
Don’t be fooled. That pretty red tuna in the case at the grocer may not be as fresh as you think. Fresh, untreated tuna naturally oxidizes and changes color without affecting its silky, smooth, and mild taste. Many sources inject carbon monoxide into tuna to help it retain its bright red color, so the tuna that’s a week old in the case will look as fresh as the day it was caught.
